Today I teach you how to make homemade mochi ice cream. The mochi wrapper is made of glutinous rice flour, sugar and water. The dish can be vegan, vegetarian and/or non-dairy, depending on the type of ice cream you choose.
This impressively simple recipe can save you from buying overpriced mochi ice creams.
- 2.8 ounces. sugar
- 2.7 fluid oz. water
- Your favorite ice cream
Here are a few tips.
1. You can consider reducing the amount of sugar to make healthier wraps. The good news is that you can use a 1.4 oz. sugar, 0.7 oz. of sugar or even a sugar-free sweetener that can be used in cooking, instead of 2.8 oz. of sugar. However, if you use less sugar or artificial sweeteners, the wraps will only stay good if you eat them shortly after preparing the meal. This is because wrappers contain less than 2.8 oz. freeze hard in the freezer and you will lose the nice and smooth mochi texture. So I recommend using twice as much glutinous rice flour to prevent the mochi from freezing.
2. The dough is very sticky. Using a fork when mixing is better than a spoon or spatula.
1. Mix rice flour and sugar in a microwave-safe bowl. Mix well. Gradually add water, stirring constantly to avoid lumps. Put in the microwave for 1 minute. Remove the bowl and mix for 1 minute. Microwave for 1 more minute and stir again for 1 minute. At this point the dough should become translucent.
Gluten free chocolate mochi ice cream
Mochi is a naturally gluten-free Japanese dessert served during the Japanese New Year and throughout the year, usually in the form of a starchy rice cake. However, that same starchy rice dough is used to wrap frozen scoops of ice cream. Mochi ice cream is a unique dessert that everyone should try at least once! Kids love to make them! Little ones can help. You can add food colors to the dough, as well as flavor extracts. I like to use natural food coloring or cocoa powder. It can be made with regular or dairy-free ice cream, sorbet, or frozen yogurt. They remind me of chocolates! Have fun with it!
Efficiency: For 10-12 pieces of mochi ice cream.
Gluten-free mochi ice cream balls similar to bonbons, but with a little more starch. A wonderful Japanese delicacy.
- 1 cup of gluten-free ice cream, sorbet or frozen yogurt
- 1/2 cup filtered water
- 1/4 cup evaporated cane juice or sugar
- 1 tablespoon of pure cocoa powder
- 1/2 cup sweet rice flour
- 1/4 teaspoon flavor extract of your choice
- 2-3 tablespoons tapioca flour/starch for sprinkling
Cut the dough into circles
Use a cookie cutter to cut circles out of the dough. Place the circles on top of each other and separate them with plastic wrap so they don't stick together. You should get about 10 rounds in total. We used a cutter with a diameter of 11 cm.
Be prepared to work quickly, as the mochi dough will become less flexible and more difficult to work with the longer it sits.
COOKING TIP:You can put the cut pieces together and roll them up again to make new circles.

What to look for
Dips and pastries, such as cookie dough in ice cream, are generally a gift of gluten. Look for ingredients such as wheat flour and barley malt syrup that contain gluten. Many brands will also include a note in the ingredients section about allergens such as gluten or soy.

Mochi is so sticky that it is difficult to swallow, especially for the elderly. But people still love Mochi. mochi is a conglomerate of refined starch that can cause constipation if consumed in excess!
You may hear the term glutinous rice when it comes to making mochi, chefs usually say that glutinous rice is used to make mochi, but that doesn't mean it contains the gluten that wheat, barley or other grains have. So if you decide to follow a gluten-free diet, you can happily reach for a plate of squishy, creamy, and most importantly, delicious mochi, because it won't hurt you.

What does mochi taste like
Mochi is really delicious and great if you try it. Mochi is slightly sweet pressed rice that actually tastes good as a chopped topping in frozen yogurt. It turns out to be cool to chew. But mochi itself is a thick and firm marshmallow texture with a floury sweet taste.
Mochi often has an added flavor, mango or red bean filling is very tasty. In Japan, however, people like more subtle differences in taste compared to how Americans use many spices and sauces in their everyday foods.
How to make vegan red bean paste
Making vegan red bean paste is very easy: all you need are red azuki beans, vegan sugar and water!
Add the azuki beans and water to the pan, cook for 5 minutes and discard the water. Add more water and bring to a boil again, cover with a lid. Simmer for about 1 hour until you can easily crush the pods with your fingers. Drain the water and add sugar. Stir continuously until you reach the desired consistency.

Tips for making the tastiest vegan mochi
- It is best to prepare Anko paste from red beansadvanceand ideally refrigerate it before making the mochi.
- Be sure to use Mochiko flour or Shiratamako flourfor this recipe. If you only have plain glutinous flour, you can make itmango mochiInstead.
- It is very important to mix all ingredients PROPERLYand make sure everything is completely melted. Otherwise, your mochi batter will not have a smooth texture.
- Since the dough is very sticky, use a lot of cornstarch to keep it from sticking., but be sure to coat it evenly with a thin layer of cornstarchso it is not coated with white cornstarch powder.
