Mochi is basically a Japanese rice cake – made from short grain glutinous rice. After the rice is cooked, it is broken down into a paste and then formed into various shapes. Sometimes other ingredients such as water, sugar and cornstarch are added to cakes. If you eat mochi in Japan, you may be able to watch it being made in a ceremony called mochitsuki.

This easy mochi donut recipe calls for simple ingredients that can be found in most supermarkets!
- Tapiocameel:If we're going to split hairs, mochi donuts are technically made from short grain glutinous rice flour (or mochiko flour), while pon de ring donuts are made from tapioca flour. In the United States, however, the names have become interchangeable. Both types of flour have a high starch content, which gives a bouncy chew. You can use any flour in this recipe. Mister Donut, the largest donut chain in Japan, uses tapioca flour because it provides a lighter texture.
- Gluten-free flour:Gluten-free flour prevents the chewy donuts from becoming too dense. For best results, use gluten-free all-purpose flour that contains xanthan gum. My favorite brand is Bob's Red Mill's 1:1 Baking Flour. Use all-purpose flour if you don't have a gluten intolerance.
- Baking powder:Baking soda creates carbon dioxide bubbles that cause the dough to rise in the oven.
- sugar &Vanilla extract:To sweeten the donuts! You can use cane sugar, but coconut sugar or brown sugar is also possible. Vanilla extract also enhances the sweetness of the donuts.
- coconut ghurt:The yogurt will moisten the starchy flour without adding too much liquid.
- almond milk:For moistening the dough and icing! If you're not vegan, whole milk will work too.
- Oil:Any neutral flavored oil works great. I used vegetable oil.
- Powdered sugar:For making a simple icing. The powdered sugar dissolves into a smooth glaze when you add the liquid. However, you don't need a lot of liquid. Just mix well.
- Food coloring:Add any color you like! i like to getnatural food coloringwhich has no added colors.
Pon de ring donuts are easy to personalize! Just change the frosting and toppings. Here are some simple ideas.
- Accessories:Top the frosting with black sesame seeds, crushed freeze-dried strawberries, melted white chocolate, sprinkles, crushed nuts, fruit stones, or rainbow sprinkles.
- Matcha Glaze:Add a tablespoon of matcha powder to the classic glaze recipe.
- strawberry glaze:Add strawberry jam or strawberry sauce to the classic frosting.
- Chocolate Icing:Melt two tablespoons of butter in a small saucepan, then add 1/4 cup of dark cocoa powder and two tablespoons of almond milk. Stir in 1.5 cups of powdered sugar until mixture is smooth. If the icing is too thick, add more almond milk.
- Make donut holes:Instead of sticking the dough balls together on the baking sheet, leave the dough balls separately and bake them as individual bite-sized donut holes!
- White chocolate:Cover the top of the donuts with melted white chocolate.

To combine:Mix the wet ingredients with the dry ingredients until well combined. If the mixture is too dry, add a little more almond milk. You should be able to roll a tablespoon of the sticky dough into a ball and hold its shape.
Roll out the dough and shape the donuts:Scoop out about ½ teaspoon of donut dough and roll into a small ball. Repeat with the remaining dough. Place six balls of dough in the shape of a circle on the baking tray. Repeat until you have eight donuts. This will give you that signature sweet shape.

Preheat oven to 338-340 degrees F/170 C. Line a baking sheet with parchment paper, set aside.
Mix both flours, baking powder and sugar until foamy in a mixing bowl.
In a separate bowl, whisk yogurt, ¼ cup almond milk, vanilla, and oil.
Mix the wet ingredients into the dry ingredients until well blended. Depending on the moisture content of the yogurt, it may be necessary to add more almond milk. Start with 1 tablespoon until the dough is malleable but not too sticky. You should be able to roll the dough into a ball and hold its shape.
Scoop out about ½ teaspoon of donut dough and roll into a small ball. Repeat with the remaining dough.
Place 6 balls in the shape of a circle. Repeat to form a total of 8 circles/doughnuts.
Place the baking sheet with the donuts in the oven and bake for 10-15 minutes or until lightly browned and cooked through.
Remove from oven and let cool completely on a wire rack before icing.
To prepare the glaze:Mix powdered sugar and 2 tablespoons of almond milk until smooth. If necessary, adjust the thickness by adding more almond milk. Color with food coloring if necessary.
Store in an airtight container in the refrigerator for up to 4 days.

- Coconut sugar can be used instead of white sugar.
